Today my mother has came to lunch, and while my sons where playing with her, I took the opportunity and I prepared the zucchini.
I’ve made some changes on the recipe, as we can eat a very limited quantity of tomato and legumes and non of dairy.
I have liked so much the result that this recipe will become one of our regular ones.
Receta de calabacines rellenos
- 4 zucchini
- 4 spoons of crushed tomatoes
- 4 spoons of crushed red pepper
- 200g of mushrooms
- 1 leek
- chopped raw almonds
- olive oil
To prepare the zucchini I have cut them by half and I have removed most of the flesh. Then I have salted them and set them aside on a pan.
Then I have chopped the leek on a food processor and I have sauteed it on a frying pan with olive oil. Meanwhile I have chopped the zucchini flesh and the mushrooms and then I have added it to the frying pan, along with the crushed tomatoes and peppers.
When the stir-fry is ready I have stuffed the zucchini with it, then cover it with the chopped raw almonds and above all the breadcrumbs. Finally I have cooked it on the oven for 30 minutes at 160ºC
